Coconuts

Coconuts are scientifically called Cocos Nucifera and grow on large palm trees, the coconut is not a nut, but a fruit.  Coconuts have been used for centuries and at this time a staple food source for one third of the world’s population. They are not only a great food source but also have medicinal value.  In this article I will be sharing with you many interesting facts about the coconut, which are found in abundance here in Nicaragua.

The coconut provides meat, water, milk and oil, with the oil or fat being the major part of the coconut that can be used for medicinal purposes. We will be looking at the benefits of each of these parts of the coconut.

We will start first with coconut oil or fat, which comes from the white coconut meat. This coconut oil does not form harmful by-products when heated to normal cooking temperatures like other vegetables oils do.  Coconut oil or fat does not contain the common saturated fats found in meat or cheese or refined oil fats that are commonly used.  Coconut oil is different as it has medium-chain fatty acids and not long-chain fatty acids as found in meat, etc. Because of this the coconut fats are metabolized differently as they go straight to the liver from the digestive tract where they are turned into ketones and are used as a quick source of energy, whereas  animal fats, cheese and refined oil fats go straight to body fat.  These ketones have therapeutic effects on brain disorders such as alzheimer’s, parkenson, epilepsy, etc.  Here is a link from CBN showing the tremendous improvement of an alzheimer’s patient and others by just eating the coconut fat, please watch it.

Coconut oil or fat kills harmful microorganisms, as approx. 50% of the fatty acids in coconut oil are the 12-carbon Lauric Acid and when this acid is digested it makes a substance called monolaurin and these two substances kill harmful bacteria, viruses and fungi helping to prevent infections.

Coconuts can be used on the outside of the body as well.  Coconut oil can be used for cosmetic purposes, as it improves  the health and appearance of the skin and helps prevent wrinkling, age spots, softens skin and helps prevent dryness and flaking by improving the moisture content of the skin and it supports the natural chemical balance of the skin.  It can also be used as a natural sunscreen, blocking out about 20% of the ultraviolet rays of the sun.  Coconut oil also promotes healthy looking hair and is good for controlling dandruff.

The second is coconut milk, which is made by grinding up the white coconut with water and it is approx. 50% fat and beneficial for all the things listed above for the coconut fat, but is not as concentrated.   It is also a great milk substitute, as I personally use it quite often as my milk substitute on my cereals, in smoothies, etc.

Here is my recipe for coconut milk, take a mature coconut, first I drain the coconut water by taking a Phillips screwdriver and hammer and making two holes in the eyes of the coconut, I drain the coconut water into a glass and drink it or save it for later.  I then wrap the coconut into an old bath towel and brake it up with a hammer.  Then I carefully with a non-sharp table knife separate the white coconut meat from the outer shell, once that is done I cut the meat into smaller pieces and put around half of the coconut meat into the blender and fill 3/4 with water and blend for about 3 or 4 minutes, then pour the ground coconut through a strainer, pressing all the milk out with a spoon or spatula.  Pour this white milk into a pitcher and it will keep for about 3 days in the refrigerator.  It tastes great, nothing is added to it. The other half of the coconut you did not blend you can store in the refrigerator and use at a later time.

The third is coconut water, which is found in the young green coconuts, as the coconut matures most of this water ripens into the solid white coconut.  One cup of coconut water has very little fat, only 9 grams.  It also has 3 grams of fiber, 2 grams of protein, plus some vitamin C, Magnesium, Manganese, potassium, sodium and calcium. Coconut water also contains antioxidants which protects cells from damaging free radicals.  Some research suggests that coconut water may potentially prevent kidney stones by reducing crystal and stone formation.  Coconut water is effective at replenishing fluids and electrolytes after exercise and far better for you than sport drinks.

IN CONCLUSION

It is amazing how beneficial the coconut is for one’s health and why more people do not consume them.  They are so abundant here in Nicaragua and I usually by one or two each week and they costs around 60 cents each.  If people would use these instead of sodas, coffee, etc,  they would be so much healthier.
