Pan de Vida (Bread of Life) – a Testimonial

Pan De Vida Granada is an artisan, wood-fired, brick oven bakery. It has a new location on Calzada just west of the Carlos A. Bravo School. Look for the bright red and white building front. It’s owned and operated by a charming Venezuelan and Italian-Canadian couple, Julio Carta and Andrea Pellegrino. They have created a warm and welcoming place to showcase their delicious handmade breads and treats.

Julio told me, “We hadn’t planned on moving so soon but are very excited to be where we are on the lower Calzada! Plus, we were able to capitalize on the move by building “dueling ovens” and acquiring a colonial house with additional space in the back for future development… Stay tuned!”

Their cinnamon buns (encandados) are to die for. With moist cinnamon sweetness on the bottom, lots of cinnamon in the filling and a thin coating of cinnamon frosting on top they are fine with a cup of coffee in the morning. They are the truly the best cinnamon buns I have ever had. And the plan is to bake cinnamon buns every other day!

They make yeast breads with whole grain flours, loaf  breads with banana, carrot, and apple flavoring as well as apple crumb and chocolate coffee cakes. Today’s selections included oatmeal-raisin cookies and peanut butter cookies.

This week a friend is coming to bake pies with unique Nicaraguan combinations of ingredients. Imagine avocado-chocolate pie, mango-coconut pie, Nicaraguan key limes in a pie and calala (I had to ask: that’s passion fruit). They hope to bake pies once a week. Sounds like a plan! Since I started working on this article I have sampled their Chocolate-Avocado pie – excellent! And now I have had a slice of Mango-Coconut pie. A touch tart with an edge of sweetness. Again, what can I say, but excellent! Today – October 10th – they are baking pumpkin pie and apple pie in celebration of Canada’s Thanksgiving!

The bakery is open from 8:00am to 7:00pm daily except Tuesdays. The coffee pot is always on! Cash only.
